Cooking with Bonberi

With our shared love of clean living, we sat down with our longtime friend and founder of Bonberi and Bonberi Mart, Nicole Berrie to chat about feeling good, words to live by and how to make The Saie Salad with a Blushing Beets dressing!



1 head romaine, thinly sliced 

1/2 fennel bulb, thinly sliced 

1 Persian cucumber, thinly sliced 

1/2 cup radicchio, thinly sliced 

1/2 cup steamed beets, chopped

1 roasted purple potato, chopped 

1/4 cup walnuts 

3 tbsp tamari 

1/2 avocado, chopped 

1/2 cup cooked beluga lentils 


Blushing Beet Dressing:

1/2 cup tahini 

1/4 cup steamed chopped beets 

1 clove garlic 

1 tbsp chopped shallot 

2 tbsp tamari 

3 tbsp apple cider vinegar 

1/4 cup iced water 

2 tbsp olive oil 

2 tbsp chopped chives

Sea salt and pepper to taste 



  1. Heat a shallow pan, add walnuts and lightly toast on medium-low heat, drizzle with tamari and leave on low heat until fragrant. Remove from heat after a minute. 
  2. In a small blender or food processor, combine all dressing ingredients. Blend until creamy, season as needed.  
  3. Combine all salad ingredients in a bowl. Top with walnuts and drizzle with dressing. Enjoy!
